Beef shank, also known as the shank or shin, is a cut of meat taken from the lower leg of the cow, either from the foreleg (foreshank) or the hind leg (hindshank). This cut is characterized by its dense muscle fibers and a high amount of connective tissue, including collagen, which requires long, slow cooking to break down and become tender.
Due to the constant use of the leg muscles, beef shank is naturally tough and sinewy. However, this toughness also means it is packed with flavor, which is released during slow-cooking methods such as braising, stewing, or slow roasting. When cooked properly, the connective tissue transforms into gelatin, giving the meat a rich, silky texture and deep flavor
Order Delivery

- Please note: The final weight will be confirmed on the day of delivery after cutting, preparation, and packaging are completed. As a result, the actual cost may vary slightly, either higher or lower, than the current estimate. A text message with the exact weight and final cost will be sent to your phone on the delivery day.
Order Placement and Delivery:
- Orders placed between 10:00 AM and 8:00 PM are delivered the following day to ensure freshness. Orders placed after 8:00 PM will be delivered the day after.
