Beef tomahawk steak is a show-stopping cut of beef that is essentially a ribeye steak with the entire rib bone left intact. This cut is named for its resemblance to a tomahawk axe, with the long bone serving as a handle. The tomahawk steak is typically cut from the rib primal, specifically from ribs 6 through 12, and includes the longissimus dorsi (eye of ribeye), spinalis (ribeye cap), and complexus muscles.
The tomahawk steak is known for its rich marbling, which contributes to its buttery and flavorful taste. The bone-in presentation not only makes it visually striking but also helps to insulate the meat during cooking, ensuring a juicy and tender steak. This cut is usually about 5cm thick and can weigh between 1 to 2 kg.
